Ask and Ye Shall Receive!

Well, you'll receive a bran muffin recipe at least :)

A few people asked so here it is - I sent the recipe to Carolyn yesterday and she can already attest to the deliciousness of the muffins.

Oh and I had a thought - what about using chocolate covered raisins - ya, know like Glosette raisins - ya, get the raisins, ya get the chocolate! This is what entered my head first thing when I woke up this morning - PURE GENIOUS I say.

Classic Bran Muffins
. . . an old favourite - with good reason. (seriously - this is what the recipe says)

1 1/2 cups ROGERS WHEAT BRAN
1 cupbuttermilk*
1/3 cupvegetable oil
1egg
2/3 cup brown sugar
1/2 tsp. vanilla
1 cup ROGERS NO ADDITIVE / ALL PURPOSE FLOUR
1 tsp. baking soda

1 tsp. baking powder
1/2 tsp. salt
1/2 cup raisins or dates

Preheat oven to 375°F (190°C).


Mix together bran and buttermilk; let stand. Combine oil, egg, sugar and vanilla and add to buttermilk-bran mixture.

Combine flour, baking soda, baking powder and salt and stir well.
Add to first mixture and stir until just blended.

Add raisins or dates and spoon into prepared muffin cups.

Bake for 15 - 20 minutes or until done.

* To substiture for 1 cup buttermilk, use 1 tbsp. lemon juice plus enough milk to make 1 cup (250 mL).

YIELD: 12 muffins.


I do use the Rogers Wheat bran but I use an organic all purpose flour and I only use ¼ cup of brown sugar!

Way to go. Now I am TOTALLY packing up That Baby and braving the 3 degree weather to walk to the store for BUTTERMILK.

Cinn- you don't HAVE to use buttermilk - use 1 Tablespoon of lemon juice in one cup of milk - let sit for 5 minutes and viola!!

I feel better I may have adverted a disaster wherein I hear on National news of tramatic walk to story by Cat ladyand Stinkerbelle!

That's right I said - CAT Lady!!! And it is definitely the pot calling the kettle black ;)

TOO LATE! I froze my whatsis off going to the store. And I bought buttermilk. (We didn't have milk either, so I bought that too.)

IT'S ALL YOUR FAULT, LADY!!

(You mock my cat lady-ness. You're just JEALOUS. When I am old and wearing a red hat and a purple pantsuit and am yelling at the neighbourhood kids... Oh wait. There's no way this ends well for me. Never mind.)

Ok... Now that I have the recipe, I need to let my man know that it's up to him to do the baking too! Bran muffins just need raisins in my mind... Or saskatoons (but not blueberries- did that last week and it was just wrong to me). Banana muffins now they need chocolate chips. And tell the muffin man that we'll send him money if we sell the recipe to anyone! Or better yet- buy him a drink in Ethiopia...
